Fun fact: The name comes from the sticky mucilage, or “honey,” left on the beans during processing. No bees involved—just natural sweetness from the coffee itself.

Special Farming Practices

Finca Los Cedros, nestled in Antioquia’s lush mountains, is a haven where nature and innovation create exceptional coffee. Peacocks roam freely, fog drifts over the coffee trees, and fruit and plantain trees thrive, enriching the ecosystem.

On the steep slopes, handpicked ripe cherries are collected using a “funnel” system, ensuring workers are able to deliver their cherries with ease. The farm’s Yellow Honey coffee is a standout, processed with the eco-friendly honey method that leaves sweet mucilage on the beans, enhancing natural sweetness while conserving water.

After 168 hours of careful fermentation—96 hours in cherry and 72 in mucilage—the beans develop rich, complex flavours, shaped by the farm’s unique microclimates and altitudes. At Finca Los Cedros, tradition and innovation combine to craft truly distinctive coffees.

The story begins with Juan David Builes, a young visionary in Agricultural Engineering, who created Yellow Honey by blending modern techniques with traditional practices. His experiments with fermentation unlock new, complex flavours in every batch.

Alongside him is Octavio, a skilled Q-grader, ensuring that each batch meets the highest quality standards. Having a Q-grader directly working on the farm team is a unique and rare occurrence making this product that much more special. Overseeing the harvest is Don Monch, Juan David’s right-hand man. He ensures only the ripest cherries are picked and manages fair pay for the coffee collectors.

Canadian Customers

Pre-Umber is happy to offer our Canadian customers free shipping on all orders over $100.00 (Northwest Territories, Nunavut and the Yukon there is a flat rate fee)  Orders qualifying for free shipping will be sent via Canada Post Expedited Parcel service, UPS or Purolator depending on your address.  If you do not want to use the free shipping option you will have the option to choose which method you would like us to ship and you simply pay what we have to pay for shipping.

If your cart just doesn't seem to total up to $100.00, don't worry.  Pre-Umber offers real-time carrier shipping through Canada Post as well as other courier services.  To access these other couriers you can not use a PO Box but must use a physical address.  You will see the real-time pricing and can choose the method of shipping that you would like.
