About Patrick dos Reis Rosa Franco

Patrick graduated in agronomy and lives on the farm with his wife Janaína and their three children - two boys and a girl. His parents, Seneval and Gislaine, also live on the property, ensuring the legacy and essence of what coffee represents in their lives. Always learning from his father Seneval and his uncle, they lead the farm with skill and determination, always remembering everything that coffee has brought and brings to their lives. Besides the financial support, coffee sustains the family's unity through coffee cultivation.

Harvest: Hand Picked - The harvest of this coffee was done by manual stripping. Harvesting by manual stripping is done with hands that knock down the coffee beans when they come into contact with the branches. In manual stripping, the grains are removed all together. A cloth is spread under the coffee plants to trim the fruits. Afterwards, lifting and cleaning takes place, and the cherries are placed in bags for transport to the other stages.

Preparation of the Cherries: Pulped Natural - The pulped natural method is the coffee that has its husk removed by a pulper, keeping the mucilage on the bean. It is also known as "cherry," pulped natural, or PN.

Fermentation: without induced fermentation - The processing of this coffee was done without induced fermentation. All coffee goes through fermentation before starting the drying process, but in this case, there is no induction. The focus is to stop as quickly as possible any fermentation that can occur.

Drying: Conventational Terraces - When drying in a thin layer, the cherries are no more than 4cm thick in open-air patios, where they are dehydrated by the heat of the sun and are turned over from time to time.
