Nestled in the steep, slippery terrain of the Antioquian mountains, the Los Cedros Farm embraces the challenges of coffee farming with innovative solutions.

A prime example of this is Red Bomb, the result of bold experimentation by Proyecto Renacer at La Sierra which developed a unique fermentation process to craft an exceptional flavour profile. The Los Cedros Farm scaled this process, adapting it to the farm’s altitudes and microclimates, ensuring that the coffee maintained its bold character while meeting the growing demand.

Renowned for its dedication to premium-quality coffee, the Los Cedros Farm utilizes advanced farming and fermentation techniques to create distinct flavour profiles. Pathways are carved into the steep hillsides, easing the handpicking process so that only the ripest cherries are selected.

Once harvested, an efficient “funnel” system transports the cherries from higher elevations to a central collection point for processing. The coffee undergoes a 120-hour fermentation process, with 72 hours in the cherry and 48 hours in mucilage, resulting in a vibrant and complex taste.

From Red Bomb’s bright berry and cacao notes to other exceptional varieties, the farm’s diverse environment allows for the cultivation of coffee at various altitudes. This process ensures each bean is fermented to perfection, delivering a rich flavour profile in every cup.

The People Behind the Los Cedros Farm

Owned by the Builes family and managed by their son, Juan David, the Los Cedros Farm is a living testament to passion and hard work.

In his twenties and pursuing a degree in Agricultural Engineering, Juan David leads the farm with a vision of innovation. Combining modern techniques with a deep respect for tradition, he is transforming the coffee industry in Ebéjico, one step at a time.

Supporting Juan David is the head groundskeeper, Don Moncho, whose expertise ensures that cherries are picked at peak ripeness for optimal flavour. Beyond his role in harvest quality, Don Moncho also manages fair pay for the coffee collectors.

To maintain the farm’s exceptional standards, Octavio, a certified Q-grader, provides expert guidance in processing methods. His approach ensures that every bean reflects the premium quality the Los Cedros Farm is known for.


The Development of Red Bomb

Red Bomb is a specialty coffee crafted to captivate adventurous coffee lovers. Its unique flavour profile combines rich notes of cacao nibs and red berries, achieved through a fermentation process that delivers complex fruity flavours and a rich, aromatic finish.

Originally created by Proyecto Renacer at La Sierra, the success of Red Bomb led to its expansion initially to Las Brisas and at the end of 2024 to the Los Cedros Farm, ensuring more coffee enthusiasts can enjoy its bold and vibrant character on a larger scale.

Juan David embodies the future of Colombia’s coffee industry. As a young entrepreneur and agricultural engineering student, he brings fresh perspectives and innovative ideas to the Los Cedros Farm.

His leadership is part of a larger movement in Colombia aimed at empowering the next generation of coffee producers, ensuring both the sustainability and continued growth of the nation’s coffee legacy. This shift is crucial in a country where the coffee industry has long been dominated by older generations, with the average age of farmers exceeding 50.

By fostering the involvement of younger generations, Juan David is helping preserve the industry’s global reputation for excellence while driving it toward an even brighter future.

Shipping information

Canada Post Strike

CUPW has issued a strike notification to Canada Post.  They have yet to say whether this will be a rotating strike or whether it will be a nationwide shut down.  During this time we are going to continue to try and offer free shipping using wither Purolator or UPS so that our customers can continue to ensure that they get there parcels in a timely manner.  Although we would like to say that we will be able to offer this service to all of our customers for some orders this is simply not feasible.

We hope that this strike will not last for long and hope that you will continue to support our business during these difficult days.  We appreciate your patience and understanding in these matters.

 

 

 

 

Canadian Customers

Pre-Umber is happy to offer our Canadian customers free shipping on all orders over $100.00 (Northwest Territories, Nunavut and the Yukon there is a flat rate fee)  Orders qualifying for free shipping will be sent via Canada Post Expedited Parcel service, UPS or Purolator depending on your address.  If you do not want to use the free shipping option you will have the option to choose which method you would like us to ship and you simply pay what we have to pay for shipping.

If your cart just doesn't seem to total up to $100.00, don't worry.  Pre-Umber offers real-time carrier shipping through Canada Post as well as other courier services.  To access these other couriers you can not use a PO Box but must use a physical address.  You will see the real-tie pricing and can choose the method of shipping that you would like. 

Pre-Umber wants you to enjoy your coffee or merchandise as soon as we can get it to you, so we always strive to send your order out within 24 hours of having received it.

United States of America Customers

Pre-Umber is now shipping to customers in the continental United States of America.  We are using Canada Post/USPS for shipping so as to include the greatest number of customers. 

We are offering a flat rate shipping fee:

0 - 12 Pounds a flat rate of $20 CND (way cheaper in USD)

12 -20 Pounds a flat rate of $35 CND (still way cheaper in USD)

31-55 Pounds a flat rate of $60 CND (still very cheap in USD)

If you would rather not use the flat rate option you can choose to use Expedited Parcel USA or Xpresspost USA at your own expense.

We do our best to ship all orders within 24 hours of receiving the order and many are shipping within a matter of hours.
