The Chiroso Natural process involves timely harvesting, flotation removal, enzymatic fermentation in bags, and sun drying, with a fermentation period of 106 hours. Chiroso is a variety known for its floral profiles, offering complex flavours that are further enhanced when combined with natural fermentation. This process creates the perfect balance between fruity and floral notes, resulting in a harmonious and rich cup of coffee that highlights the best characteristics of the variety.
Santa Elena honours time honoured practices with cutting-edge techniques, focusing on sustainability, advanced technology, and hand-picking to ensure exceptional quality. Samuel’s innovative approach to fermentation and drying methods enhances the coffee’s fruity flavours, producing high-quality beans that reflect the farm’s passion for both tradition and progress.
To combat pests, the farm steers clear of harmful pesticides, choosing natural alternatives instead. For example, water traps under the coffee plants effectively control the coffee borer beetle (broca), and organic foliar products, created in the farm’s biorefineries, manage leaf rust (roya). Additionally, cut trees are left to naturally decompose, enriching the soil and preventing erosion.
Water conservation is also a priority at Finca Santa Elena. The farm preserves three natural springs, shares clean water with neighboring farms, and uses efficient drying techniques like sun drying to replace traditional heat-based methods.
The process of developing new products during the last harvest was both exciting and complex. It required a deep dive into the traceability systems to ensure that each batch could be tracked and monitored for quality at every stage. Understanding the unique potential of each coffee variety is crucial, as it allows the team to experiment and push boundaries. One of the biggest challenges is extending fermentation times beyond traditional limits, which required overcoming initial fears and embracing innovation. The team worked collaboratively to test different methods, observing how each change impacted the final cup profile. Through this collective effort, decisions were made based on data and shared experiences, resulting in refined processes and new, exceptional products that are now ready to be introduced to the market.

Pre-Umber is happy to offer our Canadian customers free shipping on all orders over $100.00 (Northwest Territories, Nunavut and the Yukon there is a flat rate fee) Orders qualifying for free shipping will be sent via Canada Post Expedited Parcel service, UPS or Purolator depending on your address. If you do not want to use the free shipping option you will have the option to choose which method you would like us to ship and you simply pay what we have to pay for shipping.
If your cart just doesn't seem to total up to $100.00, don't worry. Pre-Umber offers real-time carrier shipping through Canada Post as well as other courier services. To access these other couriers you can not use a PO Box but must use a physical address. You will see the real-time pricing and can choose the method of shipping that you would like.
